No. 2792 — Scalded Bread Rolls

English historical translation of Molokhovets recipe No. 2792 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare a sponge from 1½ pounds of flour, 1½ glasses of water and 3 zolotniks of dried yeast, and leave to rise.

Once risen, beat thoroughly, add ½ tablespoon of salt and 1 tablespoon of sugar, then scald with 1¼ glasses of boiling water. Beat again, optionally add 1–2 tablespoons of oil, and add the remaining flour.

Knead and proceed as described for fasting rolls in recipe No. 2789. Use 3 pounds of flour altogether.
