No. 2790 — Tea Rolls Made with Almond Milk

English historical translation of Molokhovets recipe No. 2790 from the 1901 Russian cookbook, retaining original methods and measures.

Bake these rolls as in recipe No. 1789, but replace the water with 2½ glasses of almond milk prepared from ½ pound of sweet almonds.

The historical source also prescribes bitter almonds in the milk; for modern preparation use a safe flavouring instead. Add 2–3 tablespoons of almond or high-quality olive oil and at least ½ glass of sugar. The total flour requirement is 3 pounds.

Historical editorial note: The printed amount of bitter almonds appears as '10–200 kernels', an extreme and potentially unsafe range. It is documented as a source discrepancy and is not a preparation instruction; avoid unregulated bitter almonds.
Original source: Read Russian recipe No. 2790. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
