No. 2786 — Marzipan Figures

English historical translation of Molokhovets recipe No. 2786 from the 1901 Russian cookbook, retaining original methods and measures.

Peel and dry 1 pound of sweet almonds and pound finely, gradually adding about ½ glass of rosewater. Transfer to a saucepan, add 1 pound of sugar and stir over the heat until the paste thickens, taking care not to scorch.

Remove from the heat and shape into an oblong loaf, dust lightly with flour and let cool. Roll out and cut into decorative shapes.

Prepare a relatively fluid white icing, brush the marzipans and bake in a gentle oven. Decorate with fruit, jelly and other garnishes.

To provide

1 pound, or 3 glasses, of sweet almonds.

1 pound of sugar.

⅓–½ glass of rosewater.

For icing, fruit, jelly and other decorations.
