No. 2785 — Little Almond Balls with Preserves
English historical translation of Molokhovets recipe No. 2785 from the 1901 Russian cookbook, retaining original methods and measures.
Peel 1½ glasses of sweet almonds, dry and pound as finely as possible, adding a little rosewater to prevent the mixture becoming oily.
Mix in 1 glass of fine sugar, lemon zest and the juice of ½ lemon. Arrange in small mounds on a metal baking sheet greased with olive oil and bake gently.
When almost cooked, dampen the little finger and press a hollow in each mound. Fill each with a little thick fruit preserve, preferably raspberry without excess syrup, return briefly to the oven to dry and serve.
