No. 2751 — Fruit Kissel Made with Maize Flour (Printed Heading)
English historical translation of Molokhovets recipe No. 2751 from the 1901 Russian cookbook, retaining original methods and measures.
Bring 5 glasses of milk to a boil. Stir in ½ glass of maize flour previously mixed with 1 glass of cold water. Add a little salt and 4 tablespoons of fine sugar.
Bring to a boil twice while stirring vigorously.
Historical editorial note: Although the title mentions fruit, the original method contains only milk, maize flour, salt and sugar. No missing fruit has been invented.
