No. 2683 — Rice with Mushrooms
English historical translation of Molokhovets recipe No. 2683 from the 1901 Russian cookbook, retaining original methods and measures.
Boil 4–5 dried mushrooms, remove and finely chop them. Strain the mushroom broth and use it to cook rice until the grains remain separate.
Fry the chopped mushrooms with onion in mustard oil and mix them into the cooked rice.
