No. 268 — Spinach Leaves for Broth
Complete English translation of Molokhovets recipe No. 268 from the 1901 Russian cookbook, retaining original quantities, preparation and source.
To put whole spinach leaves into clear broth, take ⅛ Russian pound of spinach and select the best leaves. Remove the stalks entirely from every leaf, wash in cold water and drain until dry.
Put the leaves into a soup tureen and pour over boiling strained broth.
