No. 267 — Fresh Cucumbers for Broth
Complete English translation of Molokhovets recipe No. 267 from the 1901 Russian cookbook, retaining original quantities, preparation and source.
Wash the cucumbers and peel them, but do not throw away the skins.
Lower the peeled cucumbers into boiling salted water with ¼ small spoonful of salt. Bring to the boil over high heat in an uncovered pot, drain in a colander and rinse with cold water.
Transfer to a separate saucepan together with the reserved cucumber skins, cover with strained broth and finish cooking. Discard the skins before serving.
