No. 2661 — Macaroni with Mushrooms
English historical translation of Molokhovets recipe No. 2661 from the 1901 Russian cookbook, retaining original methods and measures.
Cook 6 dried mushrooms and chop them finely. Use a small quantity of their cooking broth to boil ½ pound of Italian macaroni.
Add the chopped mushrooms, mix with the pasta and transfer to a serving dish. Serve separately 2–3 chopped onions fried until brown in ½ glass of one of the vegetable oils.
