No. 2655 — Vareniki with Prunes
English historical translation of Molokhovets recipe No. 2655 from the 1901 Russian cookbook, retaining original methods and measures.
Wash 1 pound of prunes and simmer until soft in the smallest possible amount of water. Rub through a sieve, add sugar and cook further until thick, then cool.
Prepare the dough as in recipe No. 2652, fill the vareniki with the prune mixture and boil. Sprinkle with sugar to serve; optionally pour over a little wine.
