No. 2651 — Fried Twisted Pastries (Khvorost)

English historical translation of Molokhovets recipe No. 2651 from the 1901 Russian cookbook, retaining original methods and measures.

Knead together ¾ glass of water, a small glass of rum or Crimean vodka, 2 tablespoons of fine sugar and 1 pound of flour. Roll thinly and cut strips 3 vershoks long and 1½ vershoks wide; slit the centre of each strip and pull one end through the opening.

Alternatively cut small rounds with a glass, make four or five radial cuts around their edges, and stack three or four together, pressing firmly at the centre to resemble little roses.

Fry three or four at a time in ½–1 pound of hot walnut or poppy-seed oil in a small saucepan. As soon as they brown, drain on a sieve lined with absorbent paper and immediately sprinkle with sugar.
