No. 2638 — Apples Stuffed with Preserves and Baked in Almond Milk
English historical translation of Molokhovets recipe No. 2638 from the 1901 Russian cookbook, retaining original methods and measures.
Take medium-sized good apples (the weight is missing from the original text). Core each apple and peel it, then rub with lemon to prevent discoloration. Stuff with any fruit preserves, preferably raspberry or cherry.
Arrange the apples on a round dish. Prepare almond milk from a cup of almonds and 1½ glasses of water. Without straining it, pour over the apples and bake very gently in a low oven until tender; serve.
To provide
12 apples and ¼ pound of almonds. | 1 glass of preserves and ½ lemon. |
Historical editorial note: The original's opening specifies 'a pound of good apples' without a numeral, whereas the ingredient list says twelve apples.
