No. 2630 — Rice with Cranberry Juice
English historical translation of Molokhovets recipe No. 2630 from the 1901 Russian cookbook, retaining original methods and measures.
Cook 2 glasses (1 pound) of rice tied inside a cloth so that the grains remain separate. Mix in 10–20 pounded sweet almonds and 5 pounded bitter almonds combined with sugar.
Serve with thick raw cranberry juice sweetened with sugar: rub ½ pound of cranberries through a sieve and mix with 1 glass of fine sugar. Pour this over the rice.
Historical editorial note: The recipe retains the historic cloth-cooking method and bitter almonds. Raw berries and unregulated bitter almonds require modern safety consideration; use a safe substitute for bitter almonds.
Original source: Read Russian recipe No. 2630. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
