No. 2627 — Cold Rice with Oranges

English historical translation of Molokhovets recipe No. 2627 from the 1901 Russian cookbook, retaining original methods and measures.

Boil 1 glass of rice so the grains remain separate. Dissolve ⅓ glass of sugar in ⅔ glass of water and mix with the rice.

Remove the zest from 1½ oranges, shred it finely and place in a saucepan with 4–8 cloves, ¾ glass of water and another ⅓ glass of sugar. Boil into a syrup and let cool.

Remove the white pith from the remaining oranges, separate the flesh into small segments and remove the seeds. Arrange with the rice on a dish and pour over the cooled orange syrup.

To provide

1 glass of rice and ⅔ glass of sugar.

2–3 oranges and 4–8 cloves.
