No. 2626 — Rice Pudding with Fresh Fruit

English historical translation of Molokhovets recipe No. 2626 from the 1901 Russian cookbook, retaining original methods and measures.

Cook 1 glass of rice and mix it with ¼–½ glass of sugar and a small glass of liqueur or maraschino. Peel 3 apples, 4 pears and 4 peaches, quarter each, and add 8 stoned yellow or red plums.

Cook the fruit in syrup made from 1 glass of water and ¾ glass of sugar. Add the plums for about five minutes; cook the peaches a little longer. Rinse a small saucepan-shaped mould with water and sprinkle with coarsely pounded sugar.

Layer the rice and cooked fruit, adding a little preserved gooseberry if desired: rice, fruit, rice, fruit and finally rice. Let cool. Unmould onto a dish, garnish with green and dark grapes, place a pear cooked in syrup on top and arrange plums around it. Add a small glass of liqueur to the remaining syrup and pour over.

To provide

1 glass of rice and 3 apples.

4 pears, 4 peaches and 8 plums.

1 tablespoon of gooseberry preserve.

1 glass of sugar.
