No. 2623 — Pink Rice Pudding
English historical translation of Molokhovets recipe No. 2623 from the 1901 Russian cookbook, retaining original methods and measures.
Pound 1½ glasses of rice and mix with 1 glass of redcurrant or raspberry syrup taken from fruit preserves, 2½ glasses of water and ¼–½ glass of sugar. Cook until done, transfer to a mould rinsed with cold water and let cool.
Turn onto a dish and pour over more of the same fruit syrup, or serve with cold milk sauce flavoured with vanilla, No. 488.
