No. 2619 — Baked Apples with Rice
English historical translation of Molokhovets recipe No. 2619 from the 1901 Russian cookbook, retaining original methods and measures.
Peel and cut up 10 medium apples, put in a saucepan with 2 glasses of water and a cup of sugar, and cook. Once tender, drain in a sieve.
Cook 1 glass of rice in the apple syrup, keeping the grains separate rather than mushy. Mix the rice with the mashed apples, transfer to a baking pan, sprinkle with breadcrumbs and bake.
On non-fasting days serve with cream. On fasting days pour over a syrup made from 1 glass of water, ¼ glass of sugar and a small glass of sherry.
To provide
10 apples and a cup of sugar. 1 glass of rice and 2–3 rusks. | For syrup: 1 small glass of sherry and ¼ glass of sugar. |
