No. 2611 — Labardan: Potato and Herring Mould

English historical translation of Molokhovets recipe No. 2611 from the 1901 Russian cookbook, retaining original methods and measures.

Peel and cool about 30 boiled potatoes, then chop them finely. Mix with 2 chopped herrings or ⅛ pound of chopped dried porcini that have been cooked. Add chopped green and white onions.

Moisten slightly with fish or mushroom stock, stir and shape like an elongated loaf. Pour over mustard sauce containing pickles, pickled mushrooms, finely chopped salted cucumbers and, especially, finely chopped onion, using about 1 glass of these additions in all.

Historical editorial note: Although titled 'Labardan', this historical entry describes a moulded potato preparation with a choice of herring or mushrooms; the unusual naming is retained.
Original source: Read Russian recipe No. 2611. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
