No. 2606 — Vinaigrette with Potatoes, Beets and Beans
English historical translation of Molokhovets recipe No. 2606 from the 1901 Russian cookbook, retaining original methods and measures.
Boil about 15 potatoes and bake 3 beetroots. Slice them and add ½ pound of cooked white beans, salt, a little pepper, 3 tablespoons of Provençal (olive) oil, 2 tablespoons of vinegar and chopped herbs. Mix well.
This vinaigrette is sometimes served instead of a green salad with boiled beef.
