No. 2602 — Marinated Smelt or Vendace

English historical translation of Molokhovets recipe No. 2602 from the 1901 Russian cookbook, retaining original methods and measures.

Clean the fish, salt, coat in flour and fry in oil. Allow to cool, then cover with cooled vinegar previously boiled with bay leaf, allspice and salt. The directions cite recipe No. 1575.

The ingredient table, however, refers to vinegar No. 3575; both numbers are retained from their respective positions in the source.

To provide

3 pounds of fish and ⅓ pound of oil.

2–3 tablespoons of flour; vinegar No. 3575.

Historical editorial note: The main text cites No. 1575 while the ingredient list cites No. 3575. This is an unresolved inconsistency in the printed source. Historical vinegar marinating is not validated shelf-stable preservation.
Original source: Read Russian recipe No. 2602. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
