No. 2582 — Mayonnaise of a Whole Stuffed Fried Fish
English historical translation of Molokhovets recipe No. 2582 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare as described in recipe No. 1472, but without eggs. Substitute fish broth for milk, Provençal (olive), walnut or mustard oil for butter, and fish glue (isinglass) for gelatin.
These substitutions are part of the original fasting variation and are not separate instructions for preparing the whole fish.
