No. 2563 — Potato and Beetroot Salad
English historical translation of Molokhovets recipe No. 2563 from the 1901 Russian cookbook, retaining original methods and measures.
Boil about 12 potatoes and bake 3 beetroots. Slice both, then add ¼ pound of cooked white beans, salt, a little pepper, 2 tablespoons of olive oil, 2–3 tablespoons of vinegar and chopped herbs. Mix and serve.
