No. 255 — Fresh Green Beans for Broth
Complete English translation of Molokhovets recipe No. 255 from the 1901 Russian cookbook, retaining original quantities, preparation and source.
String ¼ Russian pound of green bean pods by pulling the stalk and the thread along each pod. Wash and shred very finely on the diagonal.
Put briefly into cold water, but do not leave them there long. Half an hour before serving, lower into vigorously boiling salted water with ¼ small spoonful of baking soda.
Cook uncovered over the highest heat for fifteen to twenty minutes. Drain and rinse with cold water. When drained, add to hot strained broth and heat until very hot.
Original source: Read the Russian recipe No. 255. The quantities and historical terminology of the 1901 book are retained. See the measurements guide; period preparation and storage methods are not modern food-safety instructions.
