No. 2469 — Little Worms of Dried White Peas
English historical translation of Molokhovets recipe No. 2469 from the 1901 Russian cookbook, retaining original methods and measures.
Cook 2 pounds, or about 4 glasses, of ordinary dried peas until thoroughly soft. Drain off all the water and, while still hot, press the peas through a sieve directly onto a serving dish, so that they fall in small strands. Salt and pour over mustard sauce No. 476 with green onions and pepper.
