No. 2465 — Stewed Apples for Fried Fish
English historical translation of Molokhovets recipe No. 2465 from the 1901 Russian cookbook, retaining original methods and measures.
Peel 6–10 tart apples, cut each into quarters and remove the cores. Put in a saucepan with 2 tablespoons of fine sugar, 3–4 tablespoons of water and a little ground cinnamon. Cover and stew until soft; then stir in about 2 tablespoons of the fish-cooking juices and, if desired, a small glass of wine. Dried apples may be used instead.
