No. 2448 — Asparagus with Breadcrumbs or Sauce
English historical translation of Molokhovets recipe No. 2448 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare the asparagus as directed in recipe No. 679. When serving, pour over walnut oil in which breadcrumbs have been fried, sauce No. 2415, or the rum sauce referred to in the original as No. 494.
Historical editorial note: The unusual reference to a ‘rum sauce’ as No. 494 is preserved exactly as printed in the source; it is not silently corrected.
