No. 2440 — Poppy-Seed Milk or Hemp Milk

English historical translation of Molokhovets recipe No. 2440 from the 1901 Russian cookbook, retaining original methods and measures.

Scald 2 glasses of white poppy seeds, or preferably grey poppy seeds, with boiling water and allow to stand. Drain, scald again, drain again, rinse in cold water and transfer the seeds to a sieve. Put them in a stone mortar and rub with a wooden pestle until all the seeds have been crushed. When the poppy-seed mixture turns white, add 2–3 glasses of boiled water, stir, strain and squeeze out thoroughly. Sweeten with 2–4 lumps of sugar.

Historical editorial note: Although the heading also names hemp milk, the surviving instructions specify poppy seeds and do not give separate directions for hemp.
