No. 244 — Vermicelli for Broth

Complete English translation of Molokhovets recipe No. 244 from the 1901 Russian cookbook, retaining original quantities, preparation and source.

Take 1½ glasses of purchased, broken vermicelli (¼ Russian pound). Drop it directly into boiling broth, or first bring once to the boil separately in salted water, drain in a sieve and transfer to the broth; boil once more.

The author considers homemade noodles much preferable to purchased vermicelli.

Original source: Read the Russian recipe No. 244. The quantities and historical terminology of the 1901 book are retained. See the measurements guide; period preparation and storage methods are not modern food-safety instructions.
