No. 2384 — Buckwheat-Kasha Pie with Mushrooms or Fish

English historical translation of Molokhovets recipe No. 2384 from the 1901 Russian cookbook, retaining original methods and measures.

Slightly crush one pound buckwheat groats and cook into firm kasha.

Fry two or three chopped onions lightly in a third glass oil with a quarter pound boiled chopped dried porcini; combine with kasha and add pepper and dill.

Alternatively use one and a half to two pounds finely chopped pike, zander or perch instead of mushrooms, season and fry briefly with onions. Fill the pie.
