No. 2336 — Almond-Milk Soup with Noodles
English historical translation of Molokhovets recipe No. 2336 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare almond milk according to No. 2334.
Take half a glass milk and use it to make noodle dough from one and a half glasses flour; roll thin, cut strips, stack while dusting with flour and shred finely. Let dry.
Boil the noodles in water, drain thoroughly and transfer to a tureen. Pour on hot almond milk and sweeten.
Alternatively boil the noodles directly in unsweetened almond milk in a stoneware pot, then add sugar.
