No. 2301 — Belozersk Smelt and Buckwheat Soup
English historical translation of Molokhovets recipe No. 2301 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare soup according to No. 132 but omit cream.
Replace animal butter with a vegetable oil of choice; optionally brown finely chopped onion in it first, and add greens.
