No. 2180 — Long Pastries with Coffee Béchamel

English historical translation of Molokhovets recipe No. 2180 from the 1901 Russian cookbook, retaining original methods and measures.

Bring four spoons melted butter and eight spoons milk to a boil, stir in twelve level spoons flour and cook smooth.

Cool, beat in two eggs and stir until the dough comes away from the saucepan.

Roll twenty-four finger-length sticks, lightly dusting with no more than a quarter spoonful flour; bake.

For filling, heat two spoonfuls butter with quarter glass flour, half glass strong coffee, three spoons cream and four sugar lumps until thick, then cool.

Slice sticks lengthwise, spread the coffee béchamel inside and reassemble.

Boil half a pound sugar and one glass strong coffee until reduced to a glass; cool while stirring until grey, then add half a lemon's juice.

Dip each filled piece in the coating and dry on a rack; serve with mousse if desired.
