No. 2099 — Cherry-Jam Pie with Folded Yeast Pastry

English historical translation of Molokhovets recipe No. 2099 from the 1901 Russian cookbook, retaining original methods and measures.

For six people knead one and a half eggs, three eighths glass cream, one and a half spoonfuls yeast, salt and five eighths pound flour; allow to rise.

Wash and dry three eighths pound butter; roll the dough, lay the butter on it, cover with the pastry edges, roll carefully, fold and repeat three or four times.

Roll to the thickness of a little finger and cut two rounds.

Spread thick cherry jam without surplus syrup onto one, cover with the other and add a raised border and lattice.

Allow to rise, glaze with egg, sprinkle sugar, bake and decorate with jam and meringue.
