No. 2067 — Piping Glaze for Cake Decorations

English historical translation of Molokhovets recipe No. 2067 from the 1901 Russian cookbook, retaining original methods and measures.

Rub a quarter pound sugar, half an egg white and a few drops lemon juice until pale and thick.

Roll a cone from writing paper, fill with icing and snip off the tip to make an opening as thick as cord.

Pipe a chosen design; the glaze begins drying immediately.

Fill empty areas of the design with fruit, berries or candied peel.

Historical editorial note: The original uses an uncooked egg white and writing paper. For present-day use select food-safe piping materials.
Original source: Read Russian recipe No. 2067. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
