No. 2027 — Orange and Prune Compote
English historical translation of Molokhovets recipe No. 2027 from the 1901 Russian cookbook, retaining original methods and measures.
Make orange compote as in No. 2025, adding a quarter to half pound prunes.
Scald and briefly boil the prunes, drain and place with the oranges.
Pour the orange syrup over all the fruit. The original leaves the prune broth out of the compote and offers it separately.
To provide
3–4 oranges 1–2 spoonfuls rum ¼–½ pound French prunes | ¼–¾ pound sugar 10 cloves and orange zest |
