No. 2026 — Apple and Prune Compote
English historical translation of Molokhovets recipe No. 2026 from the 1901 Russian cookbook, retaining original methods and measures.
Peel and cut apples, stud with cloves and cook tender in water with cinnamon and sugar. Drain and arrange on a dish.
Separately wash and cook prunes; lift with a slotted spoon and arrange around the apples.
Add sugar to the apple syrup, reduce, strain and pour over the fruit. Lemon or orange zest may replace cinnamon and cloves.
The original keeps prune cooking liquid separate and recommends it for medicinal use.
To provide
1 pound apples or ¼–½ pound prunes 5–10 cloves and cinnamon | Or lemon and orange zest ¼–½ glass lump sugar |
