No. 2019 — Fruit Kissel Thickened with Maize Flour
English historical translation of Molokhovets recipe No. 2019 from the 1901 Russian cookbook, retaining original methods and measures.
Cook a pound fresh cherries or raspberries in water and strain to obtain five glasses juice.
Sweeten, boil and add a glass maize flour mixed with one glass cold water while stirring to prevent lumps.
Pour into a wetted mould, cool and serve with sugar and cream.
