No. 2016 — Half-Thick Hot Berry Kissel
English historical translation of Molokhovets recipe No. 2016 from the 1901 Russian cookbook, retaining original methods and measures.
Extract six glasses juice from three glasses cranberries, currants or other berries.
Add sugar according to acidity, cinnamon or lemon zest, and bring to the boil.
Add potato starch diluted with water, stir well, bring once to the boil and serve hot with sugar, milk or cream.
