No. 2013 — Raspberry, Currant, Cherry or Plum Kissel

English historical translation of Molokhovets recipe No. 2013 from the 1901 Russian cookbook, retaining original methods and measures.

Boil one to one and a half pounds raspberries, red or blackcurrants, cherries or plums with water.

Crush, strain and measure five glasses juice. Add a quarter to half pound sugar rubbed on lemon zest and boil.

Mix a glass sifted potato starch with a glass cold water, stir into the juice and cook until thick.

The author recommends a stoneware or copper vessel to prevent the colour darkening.

To provide

1–1½ pounds berries

½–1 glass sugar

1 glass sifted potato starch
