No. 2002 — English Mousse

English historical translation of Molokhovets recipe No. 2002 from the 1901 Russian cookbook, retaining original methods and measures.

Boil four glasses milk with a quarter vanilla stick or lemon zest and a quarter glass sugar.

When boiling gradually sprinkle in half a glass fine wheat or maize flour, beating constantly with a whisk, and boil several times.

Remove from heat and immediately mix in four yolks creamed pale with a third glass sugar. Stir smooth and fold in four whipped whites.

Pour onto a deep round dish and cool.

Serve milk, cream, raspberry syrup or cranberry syrup separately.

For cranberry syrup boil three quarters glass cranberries in one and a quarter glasses water, mash and strain, add half a glass fine sugar and bring to a boil.

To provide

4 glasses milk and ½ glass sugar

¼ vanilla stick

Or lemon zest from ½ lemon

4 eggs

Raspberry syrup, milk or cream

Or ¾ glass cranberries and ½ glass sugar

Historical editorial note: The historical recipe folds raw whites into warm custard; ensure egg safety.
