No. 1986 — Jelly with Mixed Fresh Berries
English historical translation of Molokhovets recipe No. 1986 from the 1901 Russian cookbook, retaining original methods and measures.
Select one and a half pounds mixed fresh sweet berries in season: raspberries, wild strawberries, Victoria strawberries, garden strawberries, grapes and fully ripe gooseberries; remove stalks.
Reserve half a pound of the best whole berries, adding a few pitted preserved cherries.
Crush the remaining pound berries and press out the juice. Bring their skins just to a boil in half a glass water and strain into the raw juice.
Boil three quarters pound lump sugar with three glasses water, dissolve soaked gelatin and add the berry juice to yield four glasses.
Clarify with paper, strain as in the general note and layer with the reserved whole berries in a mould.
