No. 1947 — Whipped-Cream Zephyr with Berries or Jam

English historical translation of Molokhovets recipe No. 1947 from the 1901 Russian cookbook, retaining original methods and measures.

Fold in a quarter pound sugar, three or four drops lemon oil and zest of three quarters of a lemon, or crushed vanilla.

Add one and a half glasses fresh wild or garden strawberries, or three quarters glass thick red jam without its syrup, or six pitted preserved plums chopped finely.

Mound and smooth on a dish, or freeze in a mould following the plombière notes.
