No. 1909 — Cherry or Redcurrant Water Ice

English historical translation of Molokhovets recipe No. 1909 from the 1901 Russian cookbook, retaining original methods and measures.

Boil two glasses water with three quarters pound sugar; the original method adds a few crushed cherry stones.

While hot stir in a quarter teaspoon citric acid and cherry juice, cool, strain into the mould and freeze.

To provide

¾ pound sugar, almost 1½ glasses

¼ teaspoon citric acid

2 pounds cherries

6 glasses salt for the ice bath

Historical editorial note: Crushed cherry kernels can release toxic compounds; do not follow that part of the historical preparation. Use pitted cherry or redcurrant juice.
Original source: Read Russian recipe No. 1909. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
