No. 1880 — Quick Drachena or Dessert

English historical translation of Molokhovets recipe No. 1880 from the 1901 Russian cookbook, retaining original methods and measures.

Cream two spoonfuls fresh butter until pale.

In another bowl cream six yolks with three quarters glass sugar, then combine with the butter and flavour with lemon zest or bitter almonds.

Gradually stir in a spoonful flour, one glass cream, a glass sour cream and six whipped whites.

Pour into a pan and bake in a moderately warm oven; serve immediately when done.

To provide

2 spoonfuls butter, about ¼ pound

6 eggs and 4 glasses sugar

1 glass cream and 1 spoonful flour

1 glass sour cream

Historical editorial note: The sugar amount is inconsistent: the method states ¾ glass, the supplies say four glasses. Unprocessed bitter almonds are potentially toxic.
