No. 1838 — Whole Apples in Puff Pastry Envelopes

English historical translation of Molokhovets recipe No. 1838 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare pastry No. 1826, roll thin and cut twelve to fifteen squares.

Core and peel small tart apples, rubbing immediately with lemon.

Put an apple on each square, sprinkle sugar inside and outside, optionally with ground cinnamon, and seal all four pastry corners together like an envelope.

Brush the tops, not the lower sides, with egg, sprinkle with coarsely crushed sugar mixed with crushed rusks, and bake straight from a cold place in a hot oven.

Dust with sugar when serving.

Historical editorial note: The ingredient list gives half a pound butter, two glasses flour, one egg, twelve to fifteen apples, a glass sugar, optional cinnamon and two rusks.
Original source: Read Russian recipe No. 1838. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
