No. 1821 — Smolensk-Groat Fritters Stuffed with Jam

English historical translation of Molokhovets recipe No. 1821 from the 1901 Russian cookbook, retaining original methods and measures.

Bring four and a half glasses milk to a boil, add one glass Smolensk groats and cook until smooth. Cool and sweeten.

Spread fairly thinly on a metal tray or dish and allow to become completely cold and firm.

Cut twenty-six to twenty-eight rounds with a cutter or glass. Put thick jam without syrup on half the rounds, cover with the others and seal the edges.

Coat in egg and breadcrumbs, fry both sides in butter, transfer to a baking sheet and heat briefly in the oven.
