No. 1819 — Fritters from Semolina, Smolensk Groats or Millet

English historical translation of Molokhovets recipe No. 1819 from the 1901 Russian cookbook, retaining original methods and measures.

Bring one bottle milk to a boil, add one and a half glasses semolina, Smolensk groats or millet and cook while stirring until smooth. Cool and salt.

Beat in six yolks, then about an hour and a half before serving fold in six whipped whites; optionally add half a spoonful thick white yeast.

Let rise somewhere warm. Without stirring, scoop flat fritters into hot butter and fry on both sides.

For small Russian-style pancakes, thin the batter slightly and bake in little pans. Serve sugar separately.
