No. 1811 — Meatless Khvorost

English historical translation of Molokhovets recipe No. 1811 from the 1901 Russian cookbook, retaining original methods and measures.

For a meatless version make a firm dough with half a glass liquid consisting of water, two spoonfuls vegetable oil and one spoonful purified vodka or rum.

Add four lumps sugar and about two and a half glasses flour.

Shape as for khvorost and fry in one pound vegetable oil; the author says nearly half the frying oil remains for another dish.

Historical editorial note: The period practice of reusing deep-frying oil requires assessment of the oil's condition and safe handling.
Original source: Read Russian recipe No. 1811. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
