No. 1809 — Traditional Fried Khvorost

English historical translation of Molokhovets recipe No. 1809 from the 1901 Russian cookbook, retaining original methods and measures.

Knead a fairly firm dough from two eggs, a quarter glass water, one and a half spoonfuls vodka or rum, a quarter glass sugar and about two and a half glasses flour.

Roll very thin, cut into strips, slit each strip in the centre and turn one end through, or braid three narrow strips together or cut into rosettes and curls.

Fry in equal parts butter and pork or goose fat, as described in the general note. The recipe makes a heaping platter.

To provide

2 eggs and 1½ spoonfuls vodka or rum

¼ glass sugar, about ⅛ pound

3 glasses flour, about 1 pound

1½ pounds butter mixed with lard No. 2293

1 spoonful alcohol or vodka

Optional cinnamon and ⅛–¼ glass sugar for dusting

Historical editorial note: The source method uses about 2½ glasses flour, while the supply table gives three. Keep alcohol away from hot frying fat.
