No. 1807 — Cream Wafers with Almond Filling

English historical translation of Molokhovets recipe No. 1807 from the 1901 Russian cookbook, retaining original methods and measures.

Beat an egg with one glass cream, one lightly measured glass flour, a spoonful sugar, salt and another yolk for a quarter of an hour.

Mix two spoonfuls fine sugar, cinnamon, crushed sweet almonds and five or six bitter almonds.

Bake wafers as in the general note. Butter each, sprinkle with the almond mixture and sandwich in pairs.

Put pairs in a buttered wafer-roll iron, close and heat for two minutes. Serve with tea or coffee; the batch makes twenty to twenty-five pairs.

Historical editorial note: The source ingredient list includes a glass of sweet almonds, half a spoonful butter and white wax. Bitter almonds can be toxic.
